This what I learned about kombucha in Thailand.

As Kosta Douridis, owner of Macrobiotic World, told me,things it’s not so simple with kombucha in Thailand.
The main reason is the high ambient temperature.
Kombucha is a product of cold countries, where the temperature in summer is in the range of 20+ C
and fermentation occurs as expected, providing all those beneficial properties about which it is written above.
In Thailand, at a higher temperature, the fermentation of bacteria shifts to a more acidic side, towards vinegar, and hence the loss of some useful properties.
Therefore, Macrobiotic World chose to import kombucha from a "cold" country, from Germany. From a solid company with a good history and reputation, each batch of whose product is also certified by a strict German government agency.
Indeed, this kombucha turned out to be softer and smoother in taste compared to its Thai more acidic in taste analogs.
