The major differences between LOHAS SHOYU and ordinary soy sauce can be found in their ingredients and brewing methods.
In terms of ingredients, it uses selected soybeans which creates the aroma of soy sauce and this indispensable aroma can stimulate appetite. Where as ordinary soy sauce utilizes wheat flour and bran which will significantly weaken the
aroma of soy sauce.
As for brewing method, it ultilizes microorganisms such as lactic acid bacteria and enzymes during the 180 days fermentation process. These are the elements that produce the foll-bodied flavour and rich aroma unique to LOHAS SHOYU.
Since ordinary soy sauce undergoes very little fermentation, MSG and other additives are used in order to cover its weak aroma and flavour.
