Dark Red Kidney Beans are an important source of iron, magnesium, phosphorus, potassium, and thiamine. They contain very little fat. And also give you very few calories and because of the fiber. Very good for dietary they contain, they quickly remove toxins from the body. These beans also help you from constipation.
The example menu
Red bean stew
- 0.25 kg dried red kidney beans, put in the water for one night
- 3 tablespoons of olive oil
- 2 onions sliced
- 4 leeks, white parts only also chopped
- 150g parsley chopped
- 100g  chopped coriander leaves
- 25g dill, chopped, or 1 tea spoon of aniseed
- 25g fresh fenugreek leaves
- 3 dried limes
- Lemon juice
- salt
Boil the kidney beans in normal water for 10 minutes, then drain and rinse. Cover with fresh water, bring to the boil water and cook for 30 minutes. 

Heat 2 tablespoons of the olive oil in a large frying pan, and fry the onions and leeks for about 5 minutes until soft. 

In the same time, heat the remaining oil in another pan and fry the parsley, coriander, dill and fenugreek for about 5 minutes over a few heat to get their truly taste.

Add the herbs. Add the kidney beans and few water to cover. Cook on the lowest heat, for 1 hour.

Add the dried limes or dried lime powder and cook gently for another 45 minutes until the beans are tender. Add lemon juice and salt to taste.

Serve with plain boiled rice.
