Example menu to using with Organic / Bio Spelt Flour
Mango cake
Ingredients
2 ripe mangos
100 g. 3/4 cup white flour
30 g/5 tbsp Organic / Bio Spelt Flour
30 g/5 tbsp cornflour/
cornstarch 190 g/1 cup raw cane sugar
7 g/2 tsp baking powder
5 g/1 tsp bicarbonate of soda
75 g/1 cup desiccated coconut
130 ml 1/2 cup rice milk
90 ml/6 tbsp neutral flavoured vegetable oil
Instruction for cook
Preheat the oven to 180°C/355°F.
Peel the mangos, cut the flesh from the stone and cut into about 1-cm/12-inch cubes. Put the remaining ingredients in a bowl and mix thoroughly. Add the mango pieces and mix through evenly.
Put the mixture into the loaf tins lined with baking paper straight away and bake in the preheated oven for about 1 hour. Important: do not open the oven at all during the baking time!
Take the cakes out of the oven and leave to cool for 30 minutes, then lift out of the tins with the baking paper and allow to cool on a wire rack.
