Creamy polenta with sunflower seeds and yogurt
Ingredients
1/2 cup of organic polenta
1/2 cup of yogurt
1/4 cup of sunflower seeds
sesame oil.
Put the polenta and four cups of cool water in a big pan. Cover, and put to boil. When the water is boiling, decrease the flame and put a flame diffuser under the pan. Uncover the pan and simmer for 10-15 minutes, stirring occasionally. Switch off the heat and divide the polenta between 4 serving bowls.
Meanwhile, heat a few drops of sesame oil in a heavy-based frying pan. Add the sunflower seeds and roast, stirring occasionally, until the seeds are brown. Top each bowl with yogurt and a sprinkling of sunflower seeds. Can keeps for 1 day.
