Adzuki beans (Vigna angularis) are small, reddish-brown legumes with a subtly sweet flavor, long used in Asian cuisine and in culinary traditions worldwide.
- Vegan source of plant protein, about 20% protein by weight.
- Rich in dietary fiber.

- Rich in iron, folate, magnesium and potassium, and notably high in manganese.
Usage: add to vegetable soups and stews, pair with grains, greens and toppings in Buddha bowls, or blend cooked beans with tahini, lemon juice and spices for a spread. Adzuki beans also work in sweet desserts and spreads.
Serving suggestion: about 1/2 to 1 cup (120-240 grams) of cooked beans.
