Contains potassium (68,206 mg/kg), magnesium (6,600 mg/kg), calcium (7,500 mg/kg), iron (20 mg/kg), iodine (0.139 mg/100g), zinc and vitamins B3, B12, C and E. Low in sugar, fat and calories. Contains 10% protein and dietary fibre (47.2g per 100g). Forms a gel-like texture, used as a thickener, emulsifier and vegan gelatin substitute.
To prepare the gel: soak in water for a few hours, rinse thoroughly, then boil until it forms a gel. Store the gel in a glass container in the refrigerator for up to 3 days.
Add 1 to 2 tablespoons of the gel to smoothies, juices or tea, use in vegan desserts as a thickener, blend with yogurt or nut milk, or steep half a tablespoon of dried moss in a cup of water as a tea.
