Garlic contains sulphur compounds (thiosulfinates, sulfoxides and dithiins), responsible for its characteristic pungent odor. It is a source of vitamin B6, vitamin C, thiamine and pantothenic acid, and of minerals including manganese, calcium, phosphorus, iron and zinc. It also contains selenium and dietary fiber.
Used for flavoring pickles, curry powder, curried vegetables, soups and sauces. Raw garlic can also be made into garlic salt, garlic vinegar, garlic cheese or croutons.
