Recipe idea, mung bean salad: combine 1 cup cooked mung beans, 1 cup diced cucumber, 1 cup halved cherry tomatoes and 1/4 cup finely chopped red onion with 2 tablespoons lemon juice, 2 tablespoons olive oil, salt and pepper. Serve chilled. Refrigerate in an airtight container for up to two days.
