Brilliant is a size grade of the Greek Kalamon olive, smaller than jumbo, with a dark purple skin, firm bite and the tart, fruity flavour typical of the variety.
Serve on a mezze or cheese board, toss through salads and pasta, or bake into bread. Drain before use and remove the pits if adding to cooked dishes.
Storage: keep refrigerated after opening and use within a few days.
