Suggested portion size: 1/2 cup (50g) of red lentils per serving. Rinse thoroughly before cooking and simmer in water (1:2 lentil-to-water ratio) for 15 to 20 minutes.
Recipe idea, red lentil coconut curry: saute 1 diced onion and 2 minced garlic cloves until golden. Add 1 tbsp curry powder, 1 cup diced tomatoes, 1 cup red lentils, 1 can coconut milk and 2 cups vegetable stock. Simmer for 20 minutes. Serve with rice or naan.
