- Plain: combine 1/2 cup millet with 1 cup water and a pinch of sea salt. Bring to a boil, reduce heat and simmer 5 minutes, then keep covered off heat for 20 minutes.
- Roasted: lightly roast on a skillet before cooking as above.
- With vegetables: add chopped vegetables to the pot and cook as above.
Serve as a main grain with vegetables, beans, lentils, chickpeas, olives, tofu, or tempeh, as a side dish, or in grain salads.
Storage: keep in a cool, dry place in a tightly sealed package.
