Brilliant is a size grade of the Kalamata olive, smaller than jumbo. The pits are already removed, so the olives are ready to eat or cook with. Dark purple skin, firm texture and a tart, fruity flavour.
Use in salads, pasta, pizza and tapenade, or serve as an appetiser with bread and olive oil. Drain before use.
Storage: keep refrigerated after opening and use within a few days.
